My mise is almost complete. I’ve analyzed how I spend my time. I’ve taken steps to slow down my rush through my life. Now I’m almost ready to start living it—there are a couple more things to finish. To conduct a proper mise, you need the right equipment. The vessels you choose for your various ingredients reflect their purpose, quantity, and preparation. For instance:
I can’t say it better than Dan Charnas did in a piece for NPR: “But practiced at its highest level, mise-en-place says that time is precious. Resources are precious. Space is precious. Your self-respect and the respect of others are precious. Use them wisely. Isn’t that a philosophy for our time?” That’s an attitude I can get on board with.
